Baking a cake that's moist, evenly baked, and holds its shape isn't about fancy equipment — it's about a handful of habits that make all the difference. Here are five we swear by.
1. Measure by weight, not volume
A cup of flour can vary by as much as 20% depending on how it's scooped. If you want consistent results every time, weigh your dry ingredients on a kitchen scale instead of relying on cup measurements.
2. Room-temperature ingredients matter
Eggs, butter, and milk blend far more evenly when they're at room temperature. Cold butter won't cream properly with sugar, and cold eggs can cause your batter to curdle. Pull everything out 30-45 minutes before you start.
3. Don't overmix the batter
Once the flour goes in, mix just until it disappears. Overmixing develops gluten, which turns a tender cake dense and chewy.
4. Know your oven
Every oven runs a little hot or cold. An inexpensive oven thermometer will tell you the truth, and rotating your pan halfway through baking evens out any hot spots.
5. Let it cool before you frost
A warm cake will melt your frosting and tear apart when you try to layer it. Cool cakes completely on a wire rack — at least an hour — before you frost or stack them.
